Maja Blanca Recipe: Traditional Filipino Treat

I often see in fiestas or any occasion back in the Philippines that one dish is always present- the Maja Blanca. It reminds me to cook it when my hubby asked me to do their Tembleque – version of a coconut dessert from Puerto Rico that is made up mainly of coconut milk and cornstarch the same as our Maja Blanca but with a slight difference with ours where we put corn kernels in the mix. The way both desserts were prepared was the same. This reminds me of the traditional Maja Blanca recipe I learned from my grandmother.

I am always intrigued by how our cultures are almost the same as in food or some dishes. The name is also derived from some of Spanish words. Perhaps, I can write about Tembleque recipe soon but for now you can try Pinoy Maja Blanca.

Ingredients:

  1. ¾ cup cornstarch – I preferred it soft so this portion will do but if you would love to make it a little bit harder in texture, you can never go wrong for 1 or more than 1 cup. A good Maja Blanca recipe always allows for personal preferences in texture.
  2. ¾ cup sugar – This portion in this recipe is quite sweet so if you don’t have a sweet tooth you can reduce per your preference.
  3. 2 cans of coconut milk – 400ml each
  4. 1 can of evaporated milk – 354ml
  5. 1 can of condensed milk – 396g
  6. 1 can of corn kernel – 432g
  7. Grated cheese or cinnamon powder (optional) – for toppings

Procedure:

  1. In a bowl, pour the evaporated milk and condensed milk. Stir while gradually adding the cornstarch until fully mix. Set aside.
  2. In a pan or casserole, pour the coconut milk and add the sugar. Put in low fire.
  3. When the coconut milk is slightly boiling, add the corn kernel and the cornstarch mix. Stir constantly. This step is crucial for a smooth Maja Blanca recipe outcome.
  4. Do not stop stirring so the mixture will not be lumpy.
  5. The mixture will become ticker. Continue to stir until it becomes solidified but still runny mixture.
  6. Remove from fire and transfer to a container following the Maja Blanca recipe tips. Let it cool then refrigerate.
  7. Add cheese or cinnamon as toppings.

It can be eaten plainly as it is or with the toppings of your preference. Enjoy this delicious Maja Blanca recipe!
