Chicken Gandules Recipe

Figuring out what to cook for every meal can be a struggle (unless you’re a chef or something). But somehow, I always manage to throw something together with whatever we’ve got in the kitchen. Today, while experimenting, I came up with a new recipe – Chicken Gandules well, new to me at least!

This is how it comes together: I spotted a can of gandules in the cabinet and found some bell pepper and chicken in the fridge. I figured, why not turn this into something tasty?

Ingredients:

  • 2 tablespoons olive oil or any cooking oil
  • 4 cloves garlic, minced
  • ½ large onion, chopped
  • 1 red bell pepper, cut into strips
  • 1-pound boneless chicken breast or thigh, cut into strips
  • Salt and pepper, to taste
  • Water (optional)
Chicken Gandules Ingredients

Procedure:

  1. Heat some cooking oil in a pan over medium heat. Once hot, sauté the chopped onion and garlic until fragrant and soft.
  2. Add the chicken pieces to the pan. Season with salt and pepper, then stir to coat everything evenly.
  3. Let the chicken cook for about 5–10 minutes, turning occasionally so it browns nicely.
  4. Toss in the bell pepper and cook for another few minutes until it starts to soften.
  5. Add the gandules (pigeon peas) to the pan. Cover and let everything cook for 10–15 minutes, or until the chicken is cooked through and the beans are tender.
  6. Serve it up with some rice and enjoy your delicious meal!
