Figuring out what to cook for every meal can be a struggle (unless you’re a chef or something). But somehow, I always manage to throw something together with whatever we’ve got in the kitchen. Today, while experimenting, I came up with a new recipe – Chicken Gandules well, new to me at least!
This is how it comes together: I spotted a can of gandules in the cabinet and found some bell pepper and chicken in the fridge. I figured, why not turn this into something tasty?

Ingredients:
- 2 tablespoons olive oil or any cooking oil
- 4 cloves garlic, minced
- ½ large onion, chopped
- 1 red bell pepper, cut into strips
- 1-pound boneless chicken breast or thigh, cut into strips
- Salt and pepper, to taste
- Water (optional)

Procedure:
- Heat some cooking oil in a pan over medium heat. Once hot, sauté the chopped onion and garlic until fragrant and soft.
- Add the chicken pieces to the pan. Season with salt and pepper, then stir to coat everything evenly.
- Let the chicken cook for about 5–10 minutes, turning occasionally so it browns nicely.
- Toss in the bell pepper and cook for another few minutes until it starts to soften.
- Add the gandules (pigeon peas) to the pan. Cover and let everything cook for 10–15 minutes, or until the chicken is cooked through and the beans are tender.
- Serve it up with some rice and enjoy your delicious meal!
